Rakkan is known as one of the best soy sauce ramen restaurants in Japan. Rakkan started in 2011 as a small, four-seater ramen bar and has now expanded to multiple locations around Tokyo and a few shops in the states. The soup is light and it is made from soybean, wheat and salt, all of which are simple and natural raw materials made in Japan.  The soup is combined with straight thin noodles, along with thick and chewy char siu. It is topped with spinach that refreshes the taste with the shredded menma. The onions floating in the soup also bring a nice accent.
